OUR VALUES

A unique maturing process developed by our Maître Affineur, combines precision temperature control techniques and perfect maturing time with Swiss quality control. The result is the subtle complexity that Icone caviars are known for.
Each box is then prepared by hand, without volume requirements, to guarantee the preservation of the unique grain quality of our caviars.
To guarantee your absolute satisfaction and impeccable quality, one of our specially trained specialists is assigned to oversee each order from caviar selection up until it is received by you and is available to help you with your special requests.

MATURATION

The maturing process developed by our maître affineur can take up to 12 months as it is the case for our rarest Grand Millesime Caviar. 

As a result of individual maturation process, each tin offers, rich and well-balanced flavours that are so hard to find today.

Around three months after the harvest, the eggs begin to reveal their true aromas.

At this point the first tasting is made, and we produce our Reserve caviar.

Once the Original Tins (1kg & 1.8 kg) arrive at our Swiss I C Ǒ N E © facilities, they are immediately stored in a cold room to start their process of maturation: it is at this point that  the long operation of ageing begins.

ATTENTION TO DETAIL

We believe that our caviar merits special packaging, that is practical, beautiful and recyclable. 
To preserve nature, our tins are almost entirely made of metal and are available in 30, 50, 125, 250 and 500 grams.
Packaging

Our Iceconic™ serving plate is specifically developed to serve caviar without needing ice. Pre-freeze the plate 24 hours before service and enjoy the clean and easy degustation of ICONE caviar.

Serving

In our opinion practical can be stylish. We use high quality EPS foam boxes to ensure up to 48 hours of guaranteed cold chain for deliveries even in the summer.

Once the Original Tins (1kg & 1.8 kg) arrive at our Swiss I C Ǒ N E © facilities, they are immediately stored in a cold room to start their process of maturation: it is at this point that  the long operation of ageing begins.

Around three months after the start of the maturation, the eggs begin to reveal their true aromas. At this point the first tasting is made, and we produce our Reserve caviar. The selection that can be enjoyed by those who try the caviar for the first time as well as by the connoisseurs.

The maturing process developed by our maître affineur can take up to 12 months. Indeed, as it is the case for our rarest Grand Millesime Caviar. The maturation process for ICONE Grand Millesime is so vigorous, that we select less than 1% of our caviars to undergo it. The caviar has to be perfect in every way. But unlike most might guess the size of Grand Millesime is usually average due to lower fat content, which in turn allows for more refined taste. 

 

For our returning clients, we also offer individual maturation time, based on their preferences. Do not hesitate to let us know your personal preferences and we will select for you the caviar that offers perfectly well-balanced flavours based on your preferences.
